Homemade Granola

It’s bank holiday which gives us an extra day away from our hectic work schedules.

One more day to relax but also a perfect time to stock up the larder. Today I have made a big batch of granola. Replacing all the naughty ingredients of shop bought granola with healthy substitutes.

All you need to do is put the below ingredients into a big bowl and mix. Pop into a preheated oven (180c) and stir every 5 minutes until golden brown. I would advise to place the mixture into 2 large lined roasting dishes. This means the dishes won’t be overfilled and the granola will crisp easily.

700g Rolled Oats (Jumbo if possible)

300g Chunky chopped nuts. I like to use Walnuts and Pecans because they are easy to chop up. Or even break up with your fingers.

100g Desiccated coconut

200g Mixture of pumpkin & sunflower seeds

3 tsp Cinnamon

5 tbsp Coconut oil (melted)

5 – 6 tbsp Runny Honey (or agave nectar if you’re being super healthy)

You want to add enough liquid sweetener to the mixture so it starts to clump together. I like mine to be more of a muesli consistency so it can be sprinkled onto fruit and yoghurt.

When the granola is cooked, stir through some dried raisins and cranberries. When cooled transfer to some airtight cereal containers and leave in your larder for up to a month.

Such a quick and easy recipe should be taken advantage of. Add more liquid sweetener to your mixture and make Granola Bars. Make it as it is and have with Almond Milk in the morning. Sprinkle on frozen yoghurt in the evening when you are feeling a little peckish (but only for something sweet.) Or treat your guests over the bank holiday weekend, adding fruit and natural yoghurt. Go all out on the presentation serving in big Jam Jars with fresh flowers scattered on the table. Easy peasy!
